Treat your ingredients with care...

  • Tofu — To achieve a firmer texture, it is recommended to press the tofu before using it in the recipe. Place the tofu between paper towels and place a heavy object on top for 15-20 minutes to remove excess moisture.
  • Bitter melon — If you find the bitterness of the melon too strong, you can soak the sliced melon in salted water for 10-15 minutes before using it in the recipe. Rinse well before adding it to the stir-fry.

Tips & Tricks

  • For a vegetarian version, you can substitute the pork with mushrooms or tofu.
  • Adjust the seasoning according to your taste preferences. You can add a touch of chili flakes for some heat or a squeeze of lemon juice for a tangy twist.
  • Serve Okinawan Tofu Chanpuru with steamed rice for a complete and satisfying meal.
  • Feel free to experiment with different vegetables based on your preference and seasonal availability.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
