In this North Dakota adaptation of Cherry Bakewell, we incorporate local ingredients and flavors to give it a unique twist. Instead of using traditional British cherry jam, we use locally sourced North Dakota cherries to create a homemade cherry jam with a touch of tartness. Preparation

1.Preheat the oven to 180°C (350°F) and grease a tart pan.

2.In a food processor, combine the flour, butter, and sugar for the shortcrust pastry until the mixture resembles breadcrumbs. Add the egg yolk and ice water, and pulse until the dough comes together. Press the dough into the tart pan, covering the bottom and sides evenly. Chill in the refrigerator for 30 minutes.

3.In a saucepan, combine the cherries, sugar, and lemon juice for the cherry jam. Cook over medium heat until the cherries soften and release their juices, about 10 minutes. Mash the cherries slightly with a fork. Remove from heat and let it cool.

4.In a mixing bowl, cream together the softened butter and sugar for the frangipane filling until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the almond flour, all-purpose flour, maple syrup, and almond extract until well combined.

5.Spread the cherry jam evenly over the chilled pastry base. Pour the frangipane filling over the cherry jam, smoothing the top with a spatula.

6.Bake in the preheated oven for 35-40 minutes, or until the filling is golden and set. Remove from the oven and let it cool completely.
