Ingredients
In this East African adaptation of Cioppino, we infuse the dish with the unique flavors of East African cuisine. We replace some of the traditional Italian-American ingredients with East African spices such as cardamom, cumin, and turmeric, which lend a distinct aroma and taste to the stew. Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and translucent.

2.Add the ground cumin, coriander, turmeric, cardamom, paprika, and chili flakes to the pot. Stir well to coat the onions and garlic with the spices.

3.Pour in the coconut milk, fish or seafood stock, diced tomatoes, and sliced bell peppers. Stir to combine all the ingredients.

4.Add the water to the pot and bring the mixture to a simmer. Let it cook for about 10 minutes to allow the flavors to meld together.

5.Gently add the mixed seafood to the pot and season with salt and pepper to taste. Stir well to ensure the seafood is evenly distributed in the stew.

6.Cover the pot and let the stew simmer for an additional 10-15 minutes, or until the seafood is cooked through and tender.

7.Remove from heat and garnish with freshly chopped cilantro.
