3.Pour in the vegetable broth and bring to a boil. Reduce the heat to a simmer and let it cook for about 15 minutes, or until the vegetables are tender.

4.Meanwhile, blanch the spinach leaves in boiling water for 1-2 minutes, then drain and rinse with cold water. Squeeze out any excess water and roughly chop the spinach.

6.Simmer the soup for an additional 5 minutes to allow the flavors to meld together. Season with salt and pepper to taste.
