Preparation

1.Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

2.In a large claypot or heavy-bottomed pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.

3.Add the chicken pieces to the pot and cook until they are lightly browned on all sides.

4.Stir in the paprika, ground coriander, ground cumin, black pepper, and salt. Cook for another minute to toast the spices.
