Ingredients

While the original Greek version of zucchini fritters, Kolokithakia tiganita, is typically seasoned with Mediterranean herbs like oregano and mint, the Circassian adaptation incorporates spices commonly used in Circassian cuisine. These include coriander, cumin, and paprika, which add a unique depth of flavor to the fritters. Additionally, the Circassian version may use different types of flour, such as chickpea flour, to enhance the texture and taste. Preparation

  1. 1.
Place the grated zucchini in a colander and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture. Squeeze out any remaining liquid.
  2. 2.
In a large bowl, combine the grated zucchini, chopped onion, minced garlic, ground coriander, ground cumin, paprika, salt, and black pepper. Mix well.
  3. 3.
Gradually add the all-purpose flour and chickpea flour (if using) to the zucchini mixture, stirring until a thick batter forms.
  4. 4.
Heat vegetable oil in a frying pan over medium heat.
  5. 5.
Drop spoonfuls of the zucchini batter into the hot oil and flatten slightly with the back of the spoon.
  6. 6.
Fry the fritters for 2-3 minutes on each side, or until golden brown and crispy.
  7. 7.
Remove the fritters from the pan and place them on a paper towel-lined plate to absorb any excess oil.
  8. 8.
Serve the Circassian Zucchini Fritters hot with a side of yogurt or herb-based dipping sauce.

Treat your ingredients with care...

  • Zucchini — Make sure to squeeze out as much moisture as possible from the grated zucchini to prevent the fritters from becoming soggy.
  • Chickpea flour — If using chickpea flour instead of all-purpose flour, the fritters will have a slightly nuttier flavor and a denser texture.

Tips & Tricks

  • For extra flavor, add a handful of chopped fresh herbs such as parsley or dill to the zucchini batter.
  • Serve the fritters immediately after frying to maintain their crispiness.
  • Experiment with different dipping sauces like garlic yogurt, mint chutney, or a spicy tomato salsa.
