Preparation
-
1.In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
-
2.In a separate bowl, beat the eggs until frothy. Add the buttermilk and vanilla extract, and whisk until well combined.
-
3.Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix; a few lumps are fine.
-
4.Cover the bowl with plastic wrap and refrigerate the batter overnight, or for at least 1 hour.
-
5.Heat a non-stick frying pan or griddle over medium heat. Grease the pan with butter or oil.
-
6.Pour 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook for another minute or until golden brown.
-
7.Repeat with the remaining batter, adding more butter or oil to the pan as needed.
-
8.Serve the Crempog warm with your choice of toppings such as honey, fresh berries, or powdered sugar.
Treat your ingredients with care...
- Buttermilk — If you don't have buttermilk on hand, you can make a substitute by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
Tips & Tricks
- For extra fluffy pancakes, separate the egg whites from the yolks. Beat the egg whites until stiff peaks form, then gently fold them into the batter just before cooking.
- Experiment with different toppings such as lemon curd, maple syrup, or whipped cream to add variety to your Crempog.
- If you prefer a thinner pancake, you can add a little more buttermilk to the batter.
Serving advice
Serve the Crempog warm, stacked on a plate, and drizzled with honey or maple syrup. Garnish with fresh berries and a dusting of powdered sugar for an extra touch of sweetness.
Presentation advice
Arrange the Crempog on a rustic wooden platter, allowing the golden-brown pancakes to take center stage. Add a sprig of fresh mint or a few edible flowers for a pop of color.
