Preparation

  1. 1.
In a large mixing bowl, combine the flour, cold butter, sugar, cinnamon, orange zest, baking powder, and salt. Rub the butter into the dry ingredients until the mixture resembles breadcrumbs.
  2. 2.
Stir in the currants or raisins.
  3. 3.
Add the beaten egg and mix until the dough starts to come together. If the dough is too dry, add a splash of milk.
  4. 4.
Turn the dough out onto a lightly floured surface and knead gently until it forms a smooth ball.
  5. 5.
Roll out the dough to a thickness of about 1/4 inch.
  6. 6.
Using a round cookie cutter, cut out circles from the dough.
  7. 7.
Heat a griddle or a non-stick frying pan over medium heat.
  8. 8.
Cook the Welsh Cakes for about 3-4 minutes on each side, or until golden brown.
  9. 9.
Remove from the griddle and immediately sprinkle with granulated sugar.
  10. 10.
    Serve warm and enjoy!

Treat your ingredients with care...

  • Butter — Make sure the butter is cold and cubed to achieve a crumbly texture in the dough.
  • Currants or raisins — Soak them in warm water for a few minutes before adding them to the dough to plump them up and prevent them from drying out during cooking.

Tips & Tricks

  • For a twist, try adding a sprinkle of nutmeg or cardamom to the dough for extra flavor.
  • Serve the Welsh Cakes warm with a dollop of clotted cream or a drizzle of honey for an indulgent treat.
  • If you don't have a griddle, you can use a non-stick frying pan instead.
