Preparation

    Heat the vegetable oil in a large pot over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.

    In the same pot, add the chopped onion and sliced carrots. Sauté until the vegetables are softened.

    Add the minced garlic and cook for another minute.

    Sprinkle the flour over the vegetables and stir well to coat.

    Slowly pour in the Welsh ale and beef broth, stirring constantly to avoid lumps.

    Return the beef to the pot and add the diced potatoes, bay leaves, dried thyme, salt, and pepper.

    Bring the stew to a boil, then reduce the heat to low and simmer for 2-3 hours, or until the beef is tender and the flavors have melded together.
