Preparation

    Heat the vegetable oil in a large pot over medium heat.

    Add the beef cubes and cook until browned on all sides. Remove the beef from the pot and set aside.

    In the same pot, add the minced garlic and sliced leeks. Sauté until the leeks are softened.

    Return the beef to the pot and add the diced potatoes, sliced carrots, bay leaves, and dried thyme.

    Pour in the beef broth and Welsh ale. Season with salt and pepper to taste.

    Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for 2-3 hours, or until the beef is tender and the flavors have melded together.
