Preparation

1.In a large mixing bowl, combine the flour, sugar, and a pinch of salt. Add the cold cubed Welsh butter and mix until the mixture resembles coarse crumbs.

2.In a separate bowl, beat one egg and vanilla extract together. Add the beaten egg mixture to the flour mixture and mix until the dough comes together.

3.Divide the dough into two equal portions and shape each into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour.

4.Preheat the oven to 180°C (350°F). Grease a 9-inch round cake pan.

5.In a small bowl, mix the creamy Welsh cheese and honey until well combined.

6.Roll out one portion of the dough to fit the bottom of the cake pan. Place it in the pan and spread the cheese and honey mixture evenly over the dough.

7.Roll out the second portion of the dough to fit the top of the cake pan. Place it over the filling and seal the edges.

8.Beat the remaining egg and brush it over the top of the cake. Sprinkle Welsh sea salt on top.

9.Bake for 30-35 minutes, or until the pastry is golden brown.

10.Allow the Gâteau Basque to cool completely before dusting with powdered sugar. Serve at room temperature.
