Ingredients
In the Welsh adaptation of Perrerreque, we incorporate traditional Welsh ingredients such as leeks and cheese to enhance the flavor profile. Additionally, the original Colombian recipe often uses cornmeal, but in this Welsh version, we replace it with a potato base for a heartier and more comforting dish. Preparation

1.Preheat the oven to 180°C (350°F).

2.In a large pot, boil the sliced potatoes until they are tender. Drain and set aside.

3.In a separate pan, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until they are translucent.

4.Add the ground beef to the pan and cook until browned. Stir in the paprika, dried thyme, salt, and pepper. Remove from heat.

5.In a baking dish, layer half of the sliced potatoes, followed by half of the leeks and half of the grated cheese. Repeat the layers with the remaining ingredients.

6.Spread the ground beef mixture evenly over the top layer of cheese.

7.Bake in the preheated oven for 30-35 minutes, or until the cheese is melted and golden brown.

8.Remove from the oven and let it cool for a few minutes before serving.
