Preparation

1.Heat the vegetable oil in a large pan over medium heat.

2.Add the chopped onion and minced garlic to the pan and sauté until the onion becomes translucent.

3.Add the sliced leeks and chopped chili peppers to the pan and cook for 5 minutes, stirring occasionally.

4.Sprinkle the ground cumin, ground coriander, dried thyme, and dried parsley over the leeks and stir well to coat.

5.Pour in the diced tomatoes and tomato paste, and season with salt and black pepper.

6.Reduce the heat to low, cover the pan, and simmer for 15-20 minutes, or until the leeks are tender.
