In this Sri Lankan adaptation, we replace the traditional ingredients with a mixture of spiced vegetables, coconut, and fresh herbs, giving the canapés a unique Sri Lankan twist. Preparation

1.Preheat the oven to 180°C (350°F).

2.Place the baguette slices on a baking sheet and brush them with coconut oil. Toast in the oven for about 10 minutes, or until golden and crispy.

3.In a pan, heat the remaining coconut oil over medium heat. Add the chopped onion, minced garlic, and green chili. Sauté until the onion becomes translucent.

4.Add the curry powder, turmeric powder, and cumin powder to the pan. Stir well to coat the onions and spices evenly.

5.Add the grated carrot and grated coconut to the pan. Cook for 2-3 minutes, until the vegetables are tender.
