Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.

2.In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent.

3.Add the sweet paprika, smoked paprika, cumin, caraway seeds, and bay leaves to the pot. Stir well to coat the onions and garlic with the spices.

4.Return the browned beef to the pot and mix it with the onion and spice mixture.

5.Add the sliced carrots, diced bell pepper, cubed potatoes, diced tomatoes, and beef broth to the pot. Season with salt and pepper to taste.

6.Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors have melded together.

7.Remove the bay leaves from the pot. Taste and adjust the seasoning if needed.
