Treat your ingredients with care...

  • Smoked bacon — Make sure to finely chop the bacon to ensure it blends well with the mashed potatoes. If you prefer a milder smoky flavor, you can use regular bacon instead.
  • Chives — Fresh chives work best for this recipe, as they add a vibrant flavor. If you don't have chives, you can substitute with finely chopped green onions.

Tips & Tricks

  • To achieve a crispier exterior, you can double-coat the croquettes by dipping them in beaten egg and breadcrumbs twice before frying.
  • If you want to make the croquettes in advance, you can shape them and refrigerate them for up to 24 hours before frying.
  • Experiment with different dipping sauces such as garlic aioli or spicy ketchup to add an extra kick to the croquettes.
