1.In a large bowl, combine the mashed potatoes, smoked bacon, chives, beaten eggs, breadcrumbs, nutmeg, salt, and pepper. Mix well until all the ingredients are evenly incorporated.

2.Shape the mixture into small cylindrical croquettes, about 5cm (2 inches) long.

3.Heat vegetable oil in a deep pan or fryer to 180°C (350°F).

4.Carefully place the croquettes into the hot oil and fry until golden brown and crispy, about 4-5 minutes.
