Preparation

1.Heat the olive oil in a large skillet over medium heat.

2.Add the onion and garlic and sauté until softened, about 5 minutes.

3.Add the curry powder, cumin, coriander, turmeric, and cayenne pepper and cook for 1-2 minutes, stirring constantly.

4.Add the chickpeas, diced tomatoes, and vegetable broth and bring to a simmer.

5.Reduce the heat to low and let the curry simmer for 10-15 minutes, until the sauce has thickened.

6.Stir in the olives and feta cheese and cook for an additional 2-3 minutes, until the cheese has melted.
