Preparation

1.Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté until softened.

2.Add red bell pepper and zucchini and sauté for 5 minutes.

3.Add tomato paste, cumin, coriander, turmeric, paprika, salt, and black pepper. Stir to combine.

4.Add coconut milk and bring to a simmer.

5.Add fresh seafood and cook until seafood is cooked through, about 5-7 minutes.

6.In a small bowl, whisk together cornstarch and water. Add to the pot and stir until the sauce thickens.

7.Serve hot, garnished with fresh cilantro.
