1.In a mixing bowl, combine the rice flour, coconut milk, pandan juice, eggs, and salt. Whisk until smooth and well combined.

2.Heat a non-stick pan over medium heat and lightly grease it with vegetable oil.

3.Pour a ladleful of the pancake batter into the pan and swirl it around to create a thin, even layer. Cook for about 1-2 minutes until the edges start to lift and the bottom is lightly golden.

4.Carefully flip the pancake and cook for another 1-2 minutes until cooked through. Transfer the pancake to a plate and repeat the process with the remaining batter.
