Preparation

  1. 1.
In a bowl, whisk together the eggs, milk, salt, black pepper, and cayenne pepper (if using).
  2. 2.
Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  3. 3.
Add the diced ham, green bell pepper, red bell pepper, and onion to the skillet. Sauté for 5 minutes until the vegetables are tender.
  4. 4.
Remove the vegetables and ham from the skillet and set aside.
  5. 5.
In the same skillet, add another tablespoon of olive oil and swirl to coat the bottom.
  6. 6.
Pour the egg mixture into the skillet and cook over medium heat.
  7. 7.
As the eggs start to set, gently lift the edges with a spatula and tilt the skillet to allow the uncooked eggs to flow to the edges.
  8. 8.
Once the omelet is mostly set but still slightly runny on top, sprinkle the sautéed vegetables, ham, and shredded cheddar cheese over one half of the omelet.
  9. 9.
Fold the other half of the omelet over the filling and cook for an additional 1-2 minutes until the cheese is melted and the omelet is cooked through.
  10. 10.
Slide the omelet onto a serving plate and garnish with fresh cilantro.
  11. 11.
    Serve hot and enjoy!

Treat your ingredients with care...

  • Ham — Use leftover ham or purchase pre-diced ham from the deli section for convenience.
  • Bell peppers — Choose firm and brightly colored bell peppers for the best flavor and texture.
  • Cheddar cheese — Opt for sharp cheddar cheese for a stronger flavor, or use a milder variety if preferred.
  • Fresh cilantro — Rinse the cilantro thoroughly and pat it dry before chopping to remove any dirt or moisture.

Tips & Tricks

  • For a spicier omelet, increase the amount of cayenne pepper or add a dash of hot sauce.
  • Customize the omelet by adding other ingredients such as mushrooms, spinach, or diced tomatoes.
  • Serve the omelet with a side of salsa or sour cream for extra flavor.
  • If you prefer a softer omelet, cook it for a shorter time and ensure the eggs are still slightly runny when folding.
  • Experiment with different types of cheese, such as pepper jack or Swiss, to vary the flavor.
