Preparation

1.In a large pot, heat the palm oil over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.

2.Add the chicken or beef to the pot and cook until browned on all sides.

3.Stir in the tomato paste, ground cumin, ground coriander, paprika, dried thyme, salt, and pepper. Cook for an additional 2 minutes to allow the spices to bloom.

4.Add the ground peanuts to the pot and stir well to combine with the meat and spices.

5.Pour in enough water to cover the ingredients and bring the stew to a simmer. Cook for 30 minutes, stirring occasionally.

6.Add the diced tomatoes, bell peppers, and scotch bonnet peppers to the pot. Continue to simmer for another 15 minutes, or until the vegetables are tender.
