Preparation

1.Rinse the millet under cold water and drain.

2.In a large pot, heat the olive oil over medium heat.

3.Add the diced onion and minced garlic to the pot and sauté until translucent.

4.Add the diced tomatoes, carrots, and bell pepper to the pot and cook for 5 minutes, until slightly softened.

5.Stir in the dried oregano, dried thyme, paprika, and bay leaf.

6.Add the rinsed millet and vegetable broth to the pot. Season with salt and pepper to taste.

7.Bring the mixture to a boil, then reduce the heat to low and cover the pot.

8.Simmer for 25-30 minutes, or until the millet is tender and the flavors have melded together.

9.Remove the bay leaf before serving.
