Preparation
-
1.In a large mixing bowl, combine the flour and salt for the dough. Add the cold cubed butter and use your fingertips to rub it into the flour until the mixture resembles coarse crumbs.
-
2.Gradually add the cold water to the dough mixture, mixing with a fork until the dough comes together. Shape the dough into a ball, cover it with plastic wrap, and refrigerate for 30 minutes.
-
3.In a separate bowl, combine the diced apples, brown sugar, cinnamon, and lemon juice for the filling. Mix well until the apples are evenly coated.
-
4.Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
-
5.On a lightly floured surface, roll out the chilled dough to a thickness of about 1/8 inch. Use a round cookie cutter or a glass to cut out circles of dough.
-
6.Place a spoonful of the apple filling in the center of each dough circle. Fold the dough over the filling to create a half-moon shape and seal the edges by pressing them together with a fork.
-
7.In a small bowl, whisk together the beaten egg and water for the egg wash. Brush the empanadas with the egg wash to give them a golden color when baked.
-
8.Place the empanadas on the prepared baking sheet and bake for 20-25 minutes, or until they turn golden brown.
-
9.Remove from the oven and let them cool for a few minutes. Dust the empanadas with powdered sugar before serving.
