In this Tlingit-inspired adaptation, we substitute the traditional beef used in Espetada with fresh salmon, a staple in Tlingit cuisine. The marinade is also modified to incorporate indigenous spices and flavors, adding a unique twist to the dish. Additionally, the grilling technique is retained to infuse the salmon with a smoky essence, reminiscent of traditional Tlingit cooking methods. Preparation

    In a bowl, combine the olive oil, maple syrup, soy sauce, ground cedar, smoked paprika, ground juniper berries, sea salt, and black pepper. Mix well to create the marinade.

    Place the salmon cubes in a shallow dish and pour the marinade over them. Ensure all the salmon pieces are coated evenly. Cover the dish and refrigerate for at least 30 minutes, allowing the flavors to meld.
