Preparation

1.Soak the dried white beans in water overnight. Drain and rinse before using.

2.In a large pot or slow cooker, heat the olive oil over medium heat. Add the chopped onion, carrots, celery, and minced garlic. Sauté until the vegetables are softened.

3.Add the soaked white beans, bay leaf, rosemary sprig, vegetable broth, and diced tomatoes to the pot. Season with salt and pepper.
