1.In a large mixing bowl, combine the all-purpose flour, olive oil, and water. Knead the dough until it becomes smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.

2.In a separate bowl, mix together the chopped spinach, crumbled feta cheese, parsley, mint, paprika, lemon zest, salt, and pepper.

4.Divide the dough into small balls and roll each ball into a thin circle.

5.Place a spoonful of the spinach and feta filling onto one half of the dough circle, leaving a small border around the edges.

6.Fold the other half of the dough over the filling and press the edges firmly to seal.
