Preparation

1.Place the salted fish in a large bowl and cover with 4 cups of water. Let it soak overnight in the refrigerator.

2.Drain the fish and rinse under cold water to remove excess salt. Cut the fish into smaller pieces.

3.In a large pot, bring 4 cups of water to a boil. Add the fish and simmer for 15-20 minutes, or until the fish is tender.

4.While the fish is cooking, prepare the brewis. In a separate pot, bring 1 cup of water to a boil. Add the torn hard bread and cook for 5 minutes, stirring occasionally.

5.Drain the brewis and set aside. In a large skillet, heat a tablespoon of oil or butter over medium heat. Add the brewis and cook until golden brown and crispy, about 5-7 minutes.

6.In the same skillet, fry the diced salt pork until crispy. Remove the salt pork from the skillet and set aside.

7.In the same skillet, sauté the sliced onion until golden and caramelized.

8.Serve the cooked fish alongside the crispy brewis. Top with sautéed onions and crispy salt pork. Season with salt and pepper to taste.
