1.Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until golden brown.

5.Pour in 4 cups (950ml) of water and bring the broth to a boil. Reduce the heat to low and let it simmer for 10 minutes to allow the flavors to meld together.

6.Gently place the fish fillets into the simmering broth. Cover the pot and cook for about 8-10 minutes, or until the fish is cooked through and flakes easily with a fork.

7.Once the fish is cooked, remove the pot from the heat. Garnish with fresh cilantro leaves.
