Preparation

    Rinse the pinto beans under cold water and remove any debris. Place the beans in a large pot and cover with water. Let them soak overnight.

    Drain the soaked beans and return them to the pot. Add 4 cups of fresh water and bring to a boil. Reduce heat to low, cover, and simmer for about 1 hour or until the beans are tender.

    In a separate skillet, cook the diced bacon until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.

    In the same skillet, sauté the diced onion, minced garlic, and jalapeño pepper until softened.

    Add the diced tomatoes, cumin, smoked paprika, and dried oregano to the skillet. Cook for a few minutes until the tomatoes have softened.

    Transfer the cooked bacon, chorizo, and vegetable mixture to the pot with the cooked beans. Stir well to combine.

    Season with salt and pepper to taste. Simmer the stew for an additional 15-20 minutes to allow the flavors to meld together.
