1.In a bowl, combine the minced garlic, Moldovan red wine, paprika, dried thyme, salt, and pepper to create the marinade.

2.Place the Galmaegisal pork skirt steak in a shallow dish and pour the marinade over it. Ensure the pork is evenly coated. Cover the dish and refrigerate for at least 2 hours, or overnight for best results.

3.In the meantime, prepare the pickled vegetables. In a separate bowl, combine the white vinegar, sugar, and salt. Stir until the sugar and salt are dissolved. Add the sliced cucumber, carrot, and red onion to the vinegar mixture. Toss to coat the vegetables. Cover the bowl and refrigerate for at least 1 hour.

4.Preheat the grill to medium-high heat. Remove the marinated Galmaegisal pork from the refrigerator and let it come to room temperature.

5.Grill the pork for about 4-5 minutes per side, or until it reaches an internal temperature of 63°C (145°F). Remove from the grill and let it rest for a few minutes.

6.Slice the grilled Galmaegisal pork into thin strips and serve with the Moldovan-style pickled vegetables.
