Ingredients
In this adaptation of Carbonada Criolla to Moldovan cuisine, we have made a few changes to suit the local flavors and ingredients. We have replaced some of the original ingredients with Moldovan staples such as potatoes and bell peppers. Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the beef cubes and cook until browned on all sides. Remove the beef from the pot and set aside.

2.In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent.

3.Add the carrots, bell peppers, and potatoes to the pot. Cook for 5 minutes, stirring occasionally.

4.Return the beef to the pot and add the diced tomatoes, tomato paste, beef broth, paprika, bay leaves, salt, and pepper. Stir well to combine.

5.Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for 1.5 to 2 hours, or until the beef is tender and the flavors have melded together.

6.Remove the bay leaves before serving. Adjust the seasoning if needed.
