Preparation

    In a large pot, heat the vegetable oil over medium heat. Add the chicken and beef stew meat, and cook until browned on all sides. Remove the meat from the pot and set aside.

    In the same pot, add the diced onion, minced garlic, and bell peppers. Sauté until the vegetables are softened.

    Add the tomato paste, brown sugar, Worcestershire sauce, lime juice, thyme leaves, paprika, cayenne pepper, salt, and pepper to the pot. Stir well to combine.

    Return the browned meat to the pot and pour in the coconut milk and chicken broth. Stir to combine all the ingredients.

    Add the diced tomatoes, sliced okra, and whole scotch bonnet peppers to the pot. Bring the stew to a boil, then reduce the heat to low and let it simmer for 1 hour, or until the meat is tender and the flavors have melded together.

    Add the peeled and deveined shrimp to the pot and cook for an additional 5 minutes, or until the shrimp are pink and cooked through.

    Remove the scotch bonnet peppers before serving. Adjust the seasoning if needed.
