1.Heat the vegetable oil in a large pot over medium heat.

2.Add the chopped onion, minced garlic, grated ginger, and scotch bonnet peppers. Sauté until the onions are translucent and fragrant.

3.Add the beef slices to the pot and cook until browned on all sides.

4.Stir in the Caribbean curry powder, cinnamon stick, and cloves. Cook for another minute to release the flavors.

5.Pour in the coconut milk and bring to a simmer. Reduce the heat to low and cover the pot. Let it simmer for 2-3 hours, or until the beef is tender and the sauce has thickened.

6.Stir in the brown sugar and lime juice. Season with salt to taste.
