1.In a large pot, bring water to a boil and blanch the beef bones for 5 minutes. Drain and rinse the bones under cold water to remove any impurities.

2.In the same pot, add the blanched beef bones, beef brisket, garlic, ginger, and star anise. Fill the pot with water and bring to a boil. Reduce heat to low and simmer for 2-3 hours, skimming off any impurities that rise to the surface.

3.Remove the beef brisket from the pot and set aside. Strain the broth, discarding the bones, garlic, ginger, and star anise.

4.Cook the egg noodles according to package instructions. Drain and set aside.

5.In a small bowl, mix together soy sauce, kecap manis, and lime juice. Set aside.

6.To serve, divide the cooked noodles among bowls. Top with beef slices, bean sprouts, and scallions. Ladle the hot broth over the noodles.
