1.Drain and rinse the soaked beans. In a large pot, add the beans and enough water to cover them. Bring to a boil, then reduce the heat and simmer for 1 hour or until the beans are tender.

2.In a separate pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent.

3.Add the diced tomatoes, red bell pepper, and zucchini to the pot. Cook for 5 minutes, until the vegetables start to soften.
