Preparation

1.Preheat the oven to 180°C (350°F).

2.In a food processor, combine the all-purpose flour, shredded coconut, cold cubed butter, and granulated sugar. Pulse until the mixture resembles coarse crumbs.

3.In a small bowl, whisk together the egg yolk and ice water. Gradually add the egg mixture to the food processor while pulsing, until the dough comes together.

4.Transfer the dough onto a lightly floured surface and shape it into a disk. Wrap it in plastic wrap and refrigerate for 30 minutes.

5.Roll out the chilled dough on a floured surface to fit a 9-inch pie dish. Press the dough into the dish, trimming any excess.

6.In a saucepan, whisk together the coconut milk, whole milk, granulated sugar, cornstarch, and salt. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
