1.In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.

2.Add the red bell pepper, carrot, mushrooms, and jalapeno pepper to the pot. Cook for 5 minutes, until the vegetables are slightly tender.

3.Stir in the tomato paste, lime juice, white vinegar, soy sauce, cumin, oregano, salt, black pepper, and cayenne pepper (if using). Cook for an additional 2 minutes to allow the flavors to meld together.

4.Pour in the chicken or vegetable broth and water. Bring the soup to a boil, then reduce the heat and let it simmer for 15 minutes.

5.Taste the soup and adjust the seasoning if needed.
