In this Yunnan adaptation of Japchae, we incorporate Yunnan cuisine's characteristic fresh and vibrant vegetables, such as snow peas, bell peppers, and mushrooms. The original Korean dish often includes ingredients like spinach and carrots, which we replace with Yunnan-specific vegetables to infuse the dish with the flavors of the region. Preparation

1.Cook the glass noodles according to the package instructions. Drain and set aside.

2.In a large pan or wok, heat the vegetable oil over medium-high heat.

3.Add the minced garlic and sliced onion to the pan and sauté until fragrant and slightly golden.

4.Add the bell peppers, snow peas, and mushrooms to the pan. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

5.In a small bowl, whisk together the soy sauce, oyster sauce, rice vinegar, sugar, and chili flakes (if using).

6.Add the cooked glass noodles to the pan and pour the sauce over them. Toss everything together until well combined and heated through.
