1.In a large pot, heat the olive oil over medium heat. Add the diced ostrich meat and cook until browned. Remove the meat from the pot and set aside.

2.In the same pot, add the chopped onion, carrots, celery, and minced garlic. Sauté until the vegetables are softened.

3.Add the paprika, dried thyme, and bay leaf to the pot. Stir well to coat the vegetables with the spices.

4.Return the cooked ostrich meat to the pot and pour in the chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the ostrich meat is tender.
