Preparation
-
1.Place the grated zucchini in a colander and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture. Squeeze out any remaining liquid from the zucchini.
-
2.In a large bowl, combine the grated zucchini, flour, cornstarch, parsley, green onions, garlic, cumin, paprika, and black pepper. Mix well until all the ingredients are evenly incorporated.
-
3.Heat vegetable oil in a large skillet over medium heat.
-
4.Take a spoonful of the zucchini mixture and carefully drop it into the hot oil, flattening it slightly with the back of the spoon. Repeat with more spoonfuls, making sure not to overcrowd the skillet.
-
5.Fry the fritters for about 2-3 minutes on each side, or until they turn golden brown and crispy.
-
6.Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb any excess oil.
-
7.Serve the Turkish Zucchini Fritters hot with a side of yogurt sauce or a squeeze of lemon juice.
Treat your ingredients with care...
- Zucchini — Make sure to squeeze out as much moisture as possible from the grated zucchini to prevent the fritters from becoming soggy.
