Ingredients
In this Crimean Tatar-inspired version of Kalakand, we incorporate the flavors commonly found in Crimean Tatar desserts, such as cardamom and rose water. Preparation

1.In a large non-stick pan, heat the whole milk over medium heat until it comes to a gentle boil.

2.Reduce the heat to low and add the ricotta cheese, condensed milk, sugar, and cardamom powder to the pan. Stir well to combine.

3.Cook the mixture on low heat, stirring continuously, until it thickens and starts to leave the sides of the pan. This should take approximately 30-40 minutes.

4.Once the mixture reaches a thick consistency, remove it from the heat and stir in the rose water.

5.Transfer the mixture to a greased square baking dish and spread it evenly.

6.Allow the Kalakand to cool to room temperature, then refrigerate for at least 2 hours to set.

7.Once chilled and set, cut the Kalakand into squares and garnish with crushed pistachios.
