Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until softened.

2.Add the minced garlic and grated ginger to the pot and cook for another minute until fragrant.

3.Add the lamb chunks to the pot and cook until browned on all sides.

4.In a small bowl, mix together the ground turmeric, cumin, coriander, and cardamom. Add this spice mixture to the pot and stir well to coat the lamb.

5.Add the cinnamon stick, coconut milk, water, tomato paste, soy sauce, and brown sugar to the pot. Stir to combine all the ingredients.

6.Bring the curry to a simmer, then reduce the heat to low. Cover the pot and let it cook for 1.5 to 2 hours, or until the lamb is tender and the flavors have melded together.
