1.Rinse the basmati rice under cold water until the water runs clear. Drain well.

2.In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent.

3.Add the cumin seeds, coriander powder, turmeric powder, paprika, and salt to the pot. Stir well to coat the onions and garlic with the spices.

4.Add the curry leaves to the pot and cook for 1-2 minutes until they become fragrant.

5.Add the rinsed basmati rice to the pot and stir to combine with the spices and curry leaves.

6.Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is cooked and the water is absorbed.

7.Remove the pot from heat and let it sit, covered, for 5 minutes.
