1.In a large pot, add the beef bones and cover with water. Bring to a boil and let it cook for 5 minutes. Drain the bones and rinse them under cold water to remove any impurities.

2.Return the bones to the pot and add 10 cups of water. Bring to a boil, then reduce the heat to low and simmer for 4-6 hours, skimming off any foam that rises to the surface.

3.Add the onion, garlic, ginger, and green onions to the pot. Continue simmering for another 2 hours.

4.Remove the bones and strain the broth into a clean pot. Discard the solids.

5.Return the broth to the stove and add soy sauce, salt, and black pepper. Simmer for an additional 10 minutes.
