Ingredients
In this Ukrainian adaptation, we have replaced the traditional German sauerkraut with potatoes to give the dish a heartier and more substantial feel. Preparation

1.Heat the vegetable oil in a large pot over medium heat.

2.Add the sausages and cook until browned on all sides. Remove the sausages from the pot and set aside.

3.In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.

4.Add the diced potatoes, paprika, dried thyme, and bay leaf to the pot. Stir well to coat the potatoes in the spices.

5.Pour in the beef broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer for about 20 minutes or until the potatoes are tender.

6.Slice the cooked sausages into bite-sized pieces and add them back to the pot. Stir gently to combine.

7.Season with salt and pepper to taste. Simmer for an additional 5 minutes to allow the flavors to meld together.
