Preparation

1.Soak the dried red beans in water overnight. Drain and rinse.

2.In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, grated ginger, dried red chilies, and Sichuan peppercorns. Sauté until fragrant.

3.Add the soaked red beans to the pot and stir well to combine with the spices.

4.Pour in enough water to cover the beans and bring to a boil. Reduce the heat to low and simmer for about 1 hour or until the beans are tender.

5.In a small bowl, mix together the soy sauce, rice vinegar, brown sugar, and salt. Pour the mixture into the pot and stir to coat the beans evenly.

6.Continue to simmer for another 10 minutes to allow the flavors to meld together.
