In the original Sri Lankan dish "Kol pis no rais," the bananas are cooked in a coconut milk-based curry sauce. However, in this East Indian adaptation, we use a tomato-based curry sauce infused with traditional East Indian spices. 1.Heat the vegetable oil in a pan over medium heat.

2.Add the cumin seeds and let them sizzle for a few seconds.

3.Add the chopped onions and sauté until they turn golden brown.

5.Add the coriander powder, turmeric powder, and garam masala. Cook for a minute to toast the spices.

6.Add the chopped tomatoes and cook until they soften and release their juices.

7.Add the sliced bananas and gently stir to coat them with the spice mixture.

8.Pour in the water and season with salt. Stir gently to combine.

9.Reduce the heat to low, cover the pan, and simmer for about 10 minutes, or until the bananas are tender.
