Preparation

1.In a large pot of boiling water, cook the rice cakes for 1 hour until they are firm. Remove from the water, let them cool, and then slice them into bite-sized pieces.

2.In a frying pan, heat oil over medium heat and fry the tofu cubes until golden brown and crispy. Remove from the pan and set aside.

3.In the same pan, sauté the garlic, shallots, and red chilies until fragrant.

4.Add the ground peanuts, tamarind paste, sweet soy sauce, palm sugar, and water to the pan. Stir well and let the sauce simmer for 5 minutes until it thickens.

5.Arrange the sliced rice cakes, fried tofu, bean sprouts, cucumber slices, and torn lettuce leaves on a serving plate.
