Ingredients

In this Equatorial Guinea adaptation, we have replaced some of the traditional Indonesian ingredients with those commonly found in Equatorial Guinea cuisine. The original Kupat Tahu typically includes ingredients like soy sauce, bean sprouts, and Indonesian spices. In this version, we have substituted soy sauce with a local Equatorial Guinean seasoning sauce, omitted bean sprouts, and incorporated Equatorial Guinean spices such as cumin and paprika to infuse the stew with the flavors of the region. We alse have the original recipe for Kupat tahu, so you can check it out.

Treat your ingredients with care...

  • Tofu — To achieve a crispy texture, make sure to drain the tofu well and pat it dry before cubing and cooking. You can press the tofu between paper towels or use a tofu press to remove excess moisture.

Tips & Tricks

  • For an extra kick of heat, add a pinch of cayenne pepper or a chopped chili pepper to the stew.
  • Feel free to customize the vegetable selection based on seasonal availability or personal preference.
  • If you prefer a thicker stew, you can mix a tablespoon of cornstarch with a little water and add it to the stew during the last few minutes of cooking.
