Preparation

1.Preheat the oven to 375°F (190°C).

2.Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

3.In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent.

4.Add the ground beef to the skillet and cook until browned. Drain any excess fat.

5.Stir in the chili powder, cumin, smoked paprika, diced tomatoes, and tomato sauce. Simmer for 10 minutes, then season with salt and pepper to taste.

6.In a separate bowl, combine the black beans and sweet corn.

8.Place 3 lasagna noodles on top of the sauce, followed by a layer of the meat sauce, bean and corn mixture, and a sprinkle of both cheeses.

9.Repeat the layers until all the ingredients are used, finishing with a layer of cheese on top.

10.Cover the baking dish with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

11.Remove from the oven and let it rest for a few minutes before serving.
